How It Works

Frying adds fat because hot oil migrates into food, replacing water that evaporates and filling pores left by moisture loss. The amount depends on surface area, porosity, moisture content, and coatings. This calculator uses a simple absorption model:

Estimated oil absorbed = raw weight × food absorption rate × method factor. Since conventional cooking oils are essentially 100% fat, the absorbed oil weight is treated as fat grams. Calories from that fat are calculated at 9 kcal per gram.

The absorption rates are broad averages based on commonly observed oil uptake in home frying. Deep frying gets a factor of 1.0, pan frying 0.85, and air frying 0.20 to reflect how much oil is typically retained by each method.

Worked Examples

Example 1 – Deep-fried French fries (150 g). Potatoes have a 12% absorption rate and deep frying has a method factor of 1.0. Oil absorbed = 150 × 0.12 × 1.0 = 18 g. That equals 18 g fat and 18 × 9 = 162 kcal from fat. Fat per 100 g raw weight = 12 g.

Example 2 – Pan-fried breaded chicken (120 g). Breaded items have a 15% absorption rate, and pan frying adds a 0.85 factor. Oil absorbed = 120 × 0.15 × 0.85 = 15.3 g. Calories from fat = 15.3 × 9 = 138 kcal.

Example 3 – Air-fried potatoes (150 g). Same potatoes, but air frying uses a 0.20 method factor. Oil absorbed = 150 × 0.12 × 0.20 = 3.6 g. That is only 32 kcal from fat – a dramatic reduction compared with deep frying.

Factors Affecting Accuracy

  • Oil temperature: If the oil is not hot enough, food stays in longer and absorbs more fat.
  • Frying duration: Longer cook times generally mean more oil uptake, especially for coated foods.
  • Surface area: Thin, crispy items like shoestring fries absorb more per gram than thick-cut wedges.
  • Draining: Paper towels or a wire rack remove surface oil, but oil absorbed inside the food stays.
  • Food moisture: Blanched or wet foods release steam and can create a barrier that reduces oil absorption; very wet foods can also splatter and fry unevenly.
Important: This calculator assumes the raw food starts with negligible fat. If you fry fatty meats like bacon or marbled beef, some of the food's own fat may render out, so the net fat change can be lower than the estimate – or even negative.

Frequently Asked Questions

Is absorbed oil always 100% fat?
Yes, conventional frying oils are almost entirely triglycerides – the chemical form of fat. Whether you use canola, peanut, olive, or vegetable oil, 1 g of absorbed oil is approximately 1 g of fat.

Does an air fryer add zero fat?
No. Air fryers circulate hot air and require little or no oil, but if you lightly coat food with oil, some of that oil remains. Our 0.20 factor is a reasonable average for lightly oiled items; for fully oil-free air frying, you can mentally use 0 g when reading the result.

Why is fat per 100 g based on raw weight?
Because cooked weight changes as water evaporates and oil is absorbed. Reporting per 100 g of raw weight gives a stable baseline for comparing portions and scaling recipes.

Can I use this tool for battered or gluten-free fried foods?
