This calculator is designed to be quick, but you can make it as precise as you like.
- Choose your serving size. Enter the amount in grams, ounces, or US cups of shredded coconut. If you have a food scale, grams give the most accurate result.
- Set the glycemic index. The default GI of 35 reflects fresh raw coconut flesh. If you are using coconut water, desiccated coconut, or another product, pick the closest preset or type your own GI from a food label or glucose log.
- Adjust carbs and fiber if needed. The default values (15.2 g total carbs and 9.0 g fiber per 100 g) are for fresh flesh. For packaged shredded coconut, coconut water, or coconut flour, replace them with the values on the nutrition panel.

How It Works: Glycemic Load Formula
Glycemic load combines three pieces of information: the carbohydrate content of the food, its fiber content, and its glycemic index (GI). The GI is a value from 0 to 100 that estimates how quickly a food raises blood sugar compared with pure glucose. However, GI ignores how much carbohydrate is actually on your plate, which is why glycemic load was developed.
The formulas used here are:
Net carbs per serving = (total carbs − fiber) × serving weight ÷ 100
Glycemic load = net carbs per serving × GI ÷ 100
Fiber is subtracted because it is not digested into glucose and therefore does not produce the same blood sugar response as digestible carbohydrate. The result falls into one of three standard categories:
- 10 or less — low glycemic load
- 11 to 19 — medium glycemic load
- 20 or more — high glycemic load
The same logic works for many carbohydrate-containing foods. You can use the same GL formula with chickpeas or tomatoes, since both tools let you adjust the underlying food values to match your actual portion.
Worked Examples
Example 1 — 50 g of fresh coconut flesh.
GI = 35. Total carbs = 15.2 g per 100 g, fiber = 9.0 g per 100 g.
Net carbs per serving = (15.2 − 9.0) × (50 ÷ 100) = 3.1 g.
Glycemic load = 3.1 × 35 ÷ 100 = 1.1 → Low.
Example 2 — 1 cup (80 g) of unsweetened desiccated coconut.
Using the reference values for desiccated coconut: GI ≈ 50, total carbs = 23.7 g per 100 g, fiber = 12.0 g per 100 g.
Net carbs per serving = (23.7 − 12.0) × (80 ÷ 100) = 9.4 g.
Glycemic load = 9.4 × 50 ÷ 100 = 4.7 → Low.
Both examples land in the low range, but notice that the second serving contains more carbohydrate. If you increased the desiccated coconut to 200 g, the GL would climb to roughly 11.7, entering the medium range. Portion size is the deciding factor.
Tips & Best Practices
- Read the nutrition panel on your package. Brands differ, especially for sweetened shredded coconut, which can contain added sugar and significantly higher total carbohydrate.
- Watch for sweetened products. Sweetened desiccated coconut may contain 35–45 g of total carbohydrate per 100 g, nearly double the unsweetened version. That will push the glycemic load up quickly.
- Pair coconut with protein or fat. Coconut's own fat helps slow digestion, but adding yogurt, nuts, or eggs can further flatten the post-meal glucose response.
- Treat GI and GL as guides, not prescriptions. Individual glucose responses vary with meal composition, gut bacteria, and insulin sensitivity.
